I have two minis that are grullo/grulla a mare and gelding. I have thought that a male is referred to as grullo and a female grulla. Is this correct or does it matter?

yup! Grullo is boy and Grulla is girl... a lot of spanish words are that and the a is always girl and the o is always boy!

Also, since I didn't always know, I'm sure some others don't as well. It's pronounced "Grew-Yo" and "Grew-Ya"

The color itself would be Grullo, colors are masculine. So my horse is Grullo would be correct but my mare is a grulla is a descriptive.

Mi caballo grullo

Mi yegua grulla
 
Yep, what Gage said is correct, but I can tell you that the AZ cowboys here (the real ones, not the 'plastic' variety that just wear jeans and hats) pronounce it all 'grew ya'- the accent I guess, LOL - they are not about being grammatically or politically correct. :bgrin
