Beadboard is a very inexpensive, but very nice looking way to do wainscoting. It comes in sheets like plywood, but is very thin. We put it on the lower half of the walls in our kitchen when we re-did it last year. It would be really easy to put on the back of your island and just stain it or slap a coat of paint on it. You might need some trim for the edges.
 
I just found this on my puter. This is a little entryway by the cellar stairs and what used to be the main door of the house. It's right off the kitchen, so we made it the same. We painted the beadboard a med/dark green and the upper wall is a lighter version of the green. This pic makes it look much lighter then it really is. You can see though how the beadboard looks like little boards put together.
