Okay, this is good any time of the year, but I always associate it with Christmas:

Cream Cheese Brownies

Cream cheese 4 oz

Egg 1

Sugar ½ cup

All purpose flour 2 tbsp

Maraschino cherries

well drained & cut up ½ cup

Eggs 2

Sugar 1 cup

All purpose flour ¾ cup

Chopped pecans ½ cup

Cocoa ¼ cup (3 or 4 tablespoons if you like a

lighter chocolate flavor)

Butter or margarine ½ cup

Cheese layer: Beat cheese & 1 egg well. Blend sugar & flour in

gradually, beating until well blended. Stir in cherries. Set aside.

Brownie layer: Beat 2 eggs until frothy. Add next 3 ingredients.

Melt and stir cocoa & butter. Add to second egg mixture. Stir well.

Spread scant 2/3 of this mixture into greased 8x8 inch pan. Carefully

spread cheese filling over. Cover as completely as you can with remaining

brownie mixture. Bake in 350F oven for 30-35 minutes. Should show

signs of pulling away from edge of pan.

Icing:

Icing sugar 1 1/3 cups

Cocoa 1/3 cup (2-3 tablespoons for lighter

chocolate flavor)

Butter or margarine 3 tbsp

Hot water 5 tsp

Put all ingredients into small bowl. Beat. If too stiff to spread

Easily, add a few drops more liquid.

I used to take a pan of these to work every Christmas; it's been a few years since I've bothered (I tell the staff they aren't worth the effort any more!!

) Someone mentions them every so often though, and comment on how nice it would be if I'd bring some again. Every time we get a new staff member it gets pointed out to him/her that "Holly makes these really good cream cheese brownies...." (hint hint???)

I have a pan of them in the oven as I type this. Yummmmm.

Edited to add: These are kind of fussy to layer, especially that top layer of brownie mix--I just kind of trickle it off the spoon here & there & it covers "most" of the cheese layer.

I love cream cheese, putting it with chocolate is even better! I copied your recipe and next time I go to the store intend on buying the stuff to make it. I will let you know how mine turns out.
