My stallion's mane falls evenly on both sides most of the way down his neck. Is it preferable to put it all to one side rather than both?

It doesn't matter unless you are showing. In that case, comb/train it all to one side.

You should probably undercut it and put it to one side. If he has too much mane, he'll ruin his crest. I have a gelding that grows hair like crazy. And to help releive the weight on his neck, I undercut it every month along with thinning his forlock. I don't show him, but I know it makes him more comfortable in the end.
