Sorry I do not know the calorie count. This is Weight Watchers friendly at only 1 point with *low fat---- 2 point regular

Impossible Pumkin Pie

(8 servings)

2 c unsweetened canned pumpkin

1 1/3 c 1% or *skim milk

3/4 c sugar or * 3/4 c splenda

1/2 c bisquick or * 1/2 c reduced fat bisquick

2 1/2 tsp pumpkin pie spice

2 tsp vanilla extract

2 large eggs or *egg substitute

cooking spray

Optional: fat free cool whip

Combine all ingredients except Cool Whip. Pour into a 9 inch deep pie plate sprayed with cooking spray. Bake at 350 for approximately 50 minutes or until set. Let cool. add cool whip if desired.

Pumpkin Mouse

4 servings, 2 points each

1 c unsweetened canned pumpkin

2 c milk 1 %

2 pkgs sugar free vanilla instant pudding

1 tsp all spice or cinnamon & nutmeg

1 c fat free cool whip

Mix puddling, then add pumpkin, spice and approximately 3/4 c cool whip. Use additional Cool whip to top.

Try this recipe with gingerbread mix made with diet coke, NOTHING else. Layer broken up cake, mouse and cool whip in a bowl.
 
I made a pumpkin pie like the pumpkin mouse last week as a trial run for thanksgiving.

The recipe I used had some no-no's such as caramel syrup, but it was layered in the bottom of the crust so could easily be omitted, and not missed. Im sure that the light cool whip and pudding could be used in place of regular without negatively affecting the recipe also, so consider making the mouse into a pie with a premade graham cracker shell.
