2 teaspoons dark sesame oil
1 lb. chicken breasts, cut into 1-inch pieces
2 teaspoons minced peeled fresh ginger
3 garlic cloves, minced
1 red bell pepper, cut into strips
1/3 cup picante sauce
2 tablespoons natural peanut butter
1 tablespoon low-sodium soy sauce
2 cups hot cooked brown rice
1/4 cup sliced green onions
Heat oil in a nonstick skillet over medium- high heat. Add chicken, ginger, and garlic; stir-fry 1 minute. Add bell pepper; stir-fry 2 minutes. Add picante sauce, peanut butter, and soy sauce; stir-fry 3 minutes or until chicken is cooked. Transfer chicken and rice to individual plates and top with green onions.
