I found this really, really easy recipe for cheddar potatoes. It has become one of my hubby's favorites.
Here it is:
3 cups mashed potatoes (and instant is just fine)
1 can cheddar cheese soup
1/3 cup sour cream
Preheat oven to 350 degrees.
Stir all ingredients together and pour into a small casserole dish. Bake at 350 for 30 minutes.
I typically add a little grated cheddar to the mix and top it with a little more. (not too much or it becomes too cheesy). A little parsley on the top and it's great.
And, believe it or not, it's even better the next day. (not that we ever have any left overs)
