Can any of you color experts explain the pale shading, that appears

to give Zita, white around her coronet bands?

In person, it is not white, it is like a very blond/buff color.

Her hoofs are black except for the left rear which has two white

stripes, even though I've tried to find some white hairs at the coronet

band.

Would I send a note with her registry papers explaining that it is

not white hairs and her hoofs are black, do you think?

Does chestnut best describe her color? She is peachy colored in person.

I would just send in her papers with her color as chestnut, and for leg markings put "none". That coloring is very typical of the lighter colored flaxen chestnuts. I've registered at least with similarly colored legs since the photo requirement came into being & AMHR didn't question the "none" for leg markings.

I think that lighter color is thought by some to be an indication that the horse may carry silver (though I don't know if it actually is an indicator if you follow). I have a darker sorrel sabino roan with a flaxen mane / tail, and he also has lighter areas around the hoofs as does your horse.

True white markings above the hoof, would result in a white hoof. So, if the hooves are black...there are no white markings. The lighter coloring you see at the coronary band is very common on Chestnuts....especially those that carry Silver or Flaxen.
