With many new members to the forum, I was hoping some of you would be willing to post your favorite recipes. They dont have to be anything extravagant. The easier the better.

4 Ingredient Corn & Zucchini Fritters

1/2 cup self raising flour
2 eggs
2 cups corn kernels
1/2 Zucchini grated , seeded and excess water drained out.
Pinch of salt

Blend the flour, eggs , zucchini, salt and half of the corn in the blender. Then, Add the rest of the corn and any fresh herbs you like & then stir thru . Place tablespoons of the mixture into a med heated pan with a little veggie oil and cook till golden brown.

I use Thai basil and cilantro in mine and serve with a sweet chili sauce.
 
"cowboy " casarole

brown 1lb ground beef with some onion (your choice of how much )

mean while mix a can of cream of mushroom soup
1/4 c sour cream
1/2 c milk
I can whole kernel corn
1sml can mushrooms
1/8t garlic powder
1/8t onion powder
salt & pepper to taste
drain beef and onions and mix in with other ingrediance
put it all in a casarole dish and cover with frozen tater totes
bake at 350 for about 30 min till all worm and bubbly

I do it all in a large cast iron skillet to make almost a 1 pot wonder out of it
 
@diamond c That sounds really yummy. I maybe have to check the pantry to see what I need to purchase so it can be made.

Here is something yummy a friend (Roxanne) brought to a family event. It's very yummy and rich.

Roxanne's Cherry YumYum
1 can cherry pie filling
1 can crushed pineapple
1 box Duncan Hines Butter Recipe cake mix
Drizzle 1 stick melted butter
1 cup (or more) chopped pecans
Bake at 350* for 25 - 30 minutes.
(if someone has trouble chewing the nuts, you could get the ground ones and sprinkle on the top for the flavor.)
 
@diamond c I'm liking your recipe. @ScottyP I like the idea of that recipe but when reading it I was thinking of ground macadamia nuts in place of the pecans. I bet that recipe could be varied in several ways.

Oh what about cherry pie filling and chocolate cake instead of the butter cake recipe.

Breakfast Mashed Potatoes
leftover mashed potatoes
3-5 Quail eggs or one large chicken egg
Shredded cheese
Bacon crumbles or any other extras (sausage, peppers, ect)
Mix and form patties, then fry in pan until brown on both sides.


Crockpot Roast good for any type of meat

Add any amount or type of meat. My favorite to use is Deer Roast, Rabbit or Quail
Chicken/Beef broth, whichever you prefer. Enough to fill pot 1/2 way
Add any veggies (Jalapenos, Potatoes, carrots, onions, garlic ect)
Ranch Dressing Seasoning
1 Cup Worcestershire sauce
Garlic, Onion powder
Butter

Cook on high for 4-6 hours, or on low all day or until meat falls apart.


Leftover Roast Tacos

Shred leftover meat from your roast. Any meat will do
Fry tortillas in pan with oil, add veggies & shredded meat to pan and fry to warm up.
Add salt/pepper and any sauces
 
One thing I like to do is a variation of the 3-2-1 cake.

3 tablespoons of flavor of cake mix
3 ttsp of angel food cake mix
4 tbsp of water
STIR until mixed.
Microwave one minute.

Top with favorite icing or jelly or jam. Or eat plain.

Nice for when you want a sweet and nothing in the house is what you want.

Smaller and regular size 3-2-1 cake is

3 TBSP angel food/ cake mix dry mixture
2 TBSP water
1 MINUTE cooking time,
