I had several to respond wanting the recipes, so I will just post them here for all who are interested.

ENJOY!

*A pkg. of dry Hidden Valley Ranch dressing is delicious as a salad topper (0 cals.)

*The same dry ranch dressing as a pop corn topper (air popped popcorn: 1 cup ~ 20 cals. )

*1 bullion cube added to hot water to make a soup (5 cals.)

* Good Tuna:

1 can of Tuna in water (120 cals. will be divided into thirds in the end)

1 tsp. Dry Hidden Valley Ranch Dressing (0 cals.)

2 Tbs. dill relish (look for the one with 0 cals.)

1/2 tsp. mustard (0 cals)

Mix it all together,

3 servings ~~40 cals.

* Vegan Boca Burger, Sloppy Joe Style:

Boca- Vegan Original Burger- 1 patty (70 cals.)... look at the nutrition lable closely, I was going to buy these last night and the ones I found had 120 cals! I do know there are veggie burgers out there that are about 70 cals. though.Hunts Manwich Sloppy Joe- 1/8 cup (15 cal)

Heat up burger, pour sauce over and eat,

1 serving ~~85 cals.

* Breadless, Bologna sandwich

1 slice Weight Watchers Bologna (17.5 cals)

1 dill pickle spear (0 cal)... look at nutrition lable before purchase, some have cals.

1 oz low fat cheddar cheese (45 cal)

1 inner leaf of lettuce ( 1 cal)

Lay a slice of bologna on the lettuce leaf, put chedder cheese on bologna, set pickle spear on cheese. Roll into a wrap and enjoy!

1 serving ~~ 63.5 cals.

*Angel Food Cake with Mangoes ( to curb that sweet tooth!)

2 mangoes, peeled and cut into chunks (3 cups)

2 tablespoons fresh lime juice

1 tablespoon sugar (substitute with Splenda to save 11 cals.)

1 storebought, lowfat angel food cake (about 13 ounces)

1/4 cup fresh mint leaves

In a blender or food processor, puree 1 of the mangoes with the lime juice, sugar and Cointreau until smooth. Dice the remaining mango. Slice the cake, pour 1 tablespoon of the mango sauce over each slice, and toss some diced mango on top. Garnish with mint leaves and serve.

* Egg Drop Soup

4 cups chicken broth or stock

2 egg whites, lightly beaten

1/2 teaspoon sugar substitute with Splenda to save 5.5 cals.)

Salt, to taste

2 teaspoons Chinese rice wine or dry sherry, optional

2 green onions, (spring onions, scallions) green parts only, thinly sliced into small rounds

PREPARATION:

In a wok or saucepan, bring the 4 cups of chicken broth to a boil.

Add the sugar, salt, and the rice wine or dry sherry if using. Cook for about another minute.

Remove from the heat. Gradually stir in the egg white, stirring in one direction only. (Chopsticks are ideal for this if you have them). Garnish with the green onion and serve.

Each serving contains ~~ Calories 71 (or 64.5 cals. using Splenda)

1Tbsp Sugar Free Vanilla Syrup ( Davinci's or other) 0 cals

2 pkts or to taste Splenda

dash cinnamon

ice

Shake or frappee- Enjoy

All for under 40 cals... add 1 TBS of sugar free chocolate syrup for a mocha (25 extra cals./ a total of 60 cals.)

* ZUCCHINI TACOS

1 Garlic Clove, minced

1 Tablespoon Cumin Seeds

1 1/2 Cups Mushrooms, sliced

1 Medium Zucchini, grated (2 Cups)

1 Tomato, seeded & chopped

1/2 Cup Fresh Cilantro,

chopped

1/2 Cup Feta Cheese, crumbled

1 Cup Salsa

8 Fat Free Corn Tortilla's,

warmed

Spray a large non-stick pan with cooking spray over medium heat. Add the first 2 ingredients and sautי for 1 minute. Add the mushrooms and cook for 2 minutes. Add the next three ingredients and continue cooking until warmed through. Place 1/4-cup mixture on to each tortilla shell. Add 1 Tablespoon of cheese and 2 tablespoons salsa. Roll up and serve

SERVINGS 8 ~~ CALORIES 87;

FAT 1 g; PROTEIN 4 g; CARBS 16 g;

FIBER 3 g; CHOL 8 mg SODIUM 379 mg

SERVING SIZE= 1 Taco

WHITE BEAN ENCHILADAS

2 Tablespoons Fat Free Sour Cream

1 (16 OZ) Can Cannellini Beans

or White Beans

1/2 Cup Reduced Fat Mexican Cheese,

shredded

2 Tablespoons Green Chilies,

chopped

1 Tablespoon Green Onions,

sliced

1 Tablespoon Fresh Cilantro,

chopped

1 Teaspoon Ground Cumin

1 (10 OZ) Can Enchilada Sauce

1/4 Cup Water

6 (6") Corn Tortillas

Cooking Spray

1 Tablespoon Fresh Cilantro,

minced, optional

Preheat oven to 350°. Combine the sour cream, and beans in a food processor. Process until almost smooth. Stir in 1/4 cup cheese, and the next 4 ingredients. Combine 1/3 cup enchilada sauce and 1/4 cup water in an non-stick pan over medium heat. Heat through. Dip one tortilla in the sauce mixture to soften. Transfer to a plate. Spread 1/4 cup bean mixture down the center of tortilla. Roll up and place in a 11 x 7" baking pan. Repeat until all tortillas are filled. Add remaining sauce to pan and heat through. Spoon over enchiladas. Sprinkle with 1/4 cup cheese. Bake for 30 minutes. Sprinkle with cilantro and serve.
