I am loving my little boxwood basil plant. I can't hardly walk past it without grabbing a few leaves to munch on.
I have made fresh pesto using it a couple of times this week. Just toast some pine nuts. Grind them down with the back of my ice cream scoop. Add fresh grated parmesan cheese and olive oil and my no need to chop little mini basil leaves. Sorry I am not much of a measurer. But it simply is the 4 ingredients pine nuts, olive oil, fresh basil, and parmesan.
Used it in place of pizza sauce on a store bought wheat pizza crust. Added fresh sliced onion, black olives, sun dried tomatoes, spinach, and pepperoni to one and chicken to the other. Yummy and healthy!
