I might have to try that. How much do you end up with after cooking? I'm the only one here that likes apple butter, so I don't want to be eating it forever.

You could probably half a batch for one person, but I'd personally do the whole batch and freeze it. One batch is so good I could probably freeze it and eat it by myself throughout the year. I use the blender to give it a very smooth consistency. Yum.
