I received a box honeybells last month and this recipe was inside and it was really good. I suppose since honeybell season is almost over one could use mandarin oranges, tangerines, or the like.

LIME DRESSING

1/4 c olive oil

1/4 c fresh lime juice

2 T sugar

minced garlic to taste

Shake all ingredients together in a lidded jar. Refrigerate until ready to serve over salad.

THE SALAD

3 honeybells, peeled and sectioned

5 cups fresh spinach leaves, washed

1 1/2 cups fresh mushrooms, thinly sliced

1/2 red onio, sliced into rings

Toss the salad with dressing and serve. (Serves 6)
 
Sounds really good!!! But... I had no idea what a "honeybell" was! I had to google it to find out - we call them tangelos over here. Yummy!!!!! I'll definitely try this recipe!
