    Roast Sticky Chicken-Rotisserie Style

    Restaurant style rotisserie chicken that you can make at home: 2 teaspoons salt 1 teaspoon paprika 1/2 teaspoon onion powder 1/2 teaspoon dried thyme 1/2 teaspoon white pepper 1/4 teaspoon cayenne pepper 1/4 teaspoon black pepper 1/4 teaspoon garlic powder 1 onion, quartered 1 (4 pound) whole chicken Directions: In a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne pepper, and garlic powder. Remove and discard giblet from chicken. Rinse chicken cavity, and pat dry with paper towel. Rub chicken inside and out with spice mixture. Place 1 onion into the cavity of chicken. Place chicken in a resealable bag or double wrap with plastic wrap. Refrigerate overnight, or at least 4 to 6 hours. Preheat oven to 250 degrees F (120 degrees C). Place chicken in a roasting pan. Bake uncovered for 4 hours, to a minimum internal temperature of 180 degrees F (85 degrees C). Let the chicken stand for 10 minutes before carving.

    Oh yeah!!! it's the best with sour dough bread and tomato slices! Very good and easy to make as well!

    Sounds really good!!! But... I had no idea what a "honeybell" was! I had to google it to find out - we call them tangelos over here. Yummy!!!!! I'll definitely try this recipe! Liz N.

    What's For DINNER Tonight?

    I'm going to make stuffed chicken breasts Stuffing: Fresh baby spinach - steamed & chopped Fresh lemon juice 1 clove garlic, finely chopped Pine nuts, chopped Fat free feta cheese Mrs. Dash's original blend seasoning Fresh ground pepper. Mix stuffing together, set aside. Season outside of chicken breast with Mrs. Dash's and fresh ground pepper. Make an opening in the chicken breast for the stuffing (cut about 2/3 through), then stuff with spinach stuffing. Cook 350 for about 30-45 minutes. Healthy, low calorie, low sodium and YUMMY!

    Roasted Turkey - Year Round Meal

    Funny - I used to make turkey only at Thanksgiving and it finally dawned on me this year that there is no reason not to make turkey year round! It's low fat, low calorie and healthy! Here's what I've come up with: 3 lb. turkey breast with ribs Fresh ground black pepper Mrs. Dash's onion & herb seasoning Fresh ground rosemary 2 lemons (sliced) 1 brown onion (sliced) Baby carrots Assorted fresh veggies (broccoli, etc.) Season the turkey with the spices, put in oven roasting bag with either some water or a can of sodium-free low fat chicken broth. Arrange the lemons, onion, carrots and fresh veggies around the turkey, seal the bag with slits on the sides and roast 350 for 1 1/2 hours. It's incredible!!!!!!

    What does everyone have planned for their Super Bowl parties? I always have tortilla chips with plenty of homemade guacamole, black bean salsa and hummus. I also love to make Texas Caviar, which is a BIG hit! Here's the recipe: Ingredients: 2 (15. 8ounce) cans black-eyed peas,drained 1 (14.5 ounce) can petite diced tomatoes,drained 2 fresh medium jalapenos, stemmed, seeded and minced 1 small onion, cut into small dices 1/2 yellowbell pepper, stemmed, seeded and cut into small dices 1/4 cup chopped fresh cilantro 6 tablespoons red wine vinegar 6 tablespoons olive oil (not extra virgin) 1/2 teaspoon salt 1/2 teaspoon ground black pepper 1/2 teaspoon garlic powder 1 teaspoon dried oregano 1 1/2 teaspoons ground cumin Directions: 1. Mix all ingredients in a medium bow l;cover and refrigerate 2 hours or up to 2 days. Before serving, adjust seasonings to taste, adding extra vinegar, salt and pepper. Transfer to a serving bowl.

    Oh, boy, does that sound good!!!!! So it cooks on high for a couple (2) hours, then reduce to low...how long on low should it cook? Thanks for sharing, Jill - sounds great!
