This is one of my favorites, and you know that also means that it's easy!

Ingredients:

  • 1 box of spaghetti or linguine
  • 8oz (or more, depending on the amount of veggies, etc., you prefer...) of bottled Italian dressing
  • 1 envelope of dry Italian dressing
  • Veggies, etc. (I use a couple peppers, a couple cucumbers, and a can of diced tomatoes... others might also like celary, purple onions, and/or some pepperoni and Parmesan cheese)
  1. Just cook the pasta as to the box directions and your preference, but break it 4-5 times per bunch, and then dain and rinse the pasta in cold water
  2. Add the bottled and dried dressing
  3. Add in your choices of diced / sliced / cut veggies, and if you want the pepperoni and Parmesan.

This is better if you let it set 12+ hours.

I've been making this nearly 1x a week. We both love it and also on days when H doesn't feel like taking a sandwich for lunch, he can add some pepperoni or other meat to it and some parmesan cheese. I like mine "vegetarian" but it's really just so good, and so easy. Plus, it's very pretty with all the colors from the veggies and pasta. You can really load it up with veggies if you want.

PS Plus it actually keeps a good week in the fridge when it's just the pasta / veggie / dressing thing!
