What does everyone have planned for their Super Bowl parties? I always have tortilla chips with plenty of homemade guacamole, black bean salsa and hummus. I also love to make Texas Caviar, which is a BIG hit! Here's the recipe:

Ingredients:

2 (15. 8ounce) cans black-eyed peas,drained
1 (14.5 ounce) can petite diced tomatoes,drained
2 fresh medium jalapenos, stemmed, seeded and minced

1 small onion, cut into small dices
1/2 yellowbell pepper, stemmed, seeded and cut into small dices

1/4 cup chopped fresh cilantro

6 tablespoons red wine vinegar

6 tablespoons olive oil (not extra virgin)

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1/2 teaspoon garlic powder

1 teaspoon dried oregano

1 1/2 teaspoons ground cumin

Directions:

1. Mix all ingredients in a medium bow l;cover and refrigerate 2 hours or up to 2 days. Before serving, adjust seasonings to taste, adding extra vinegar, salt and pepper. Transfer to a serving bowl.
 
That sounds good!! I have everything here except the yellow bell and 1 can of peas, I can pick those up today. I think I'll try this since I really like to eat salsa. I've been eating my salsa with flip sides crackers, the pretzel on one side-townhouse on the other, they are really good with salsa and easier on my dental work than tortillas.

I LOVE guacamole! just finished a bowl of it yesterday. I love to eat mine with pork skins.
 
We're having nachos! Nice and fattening, so hubby has plenty to burn off as he jumps up and down, hoots and hollars.
