Several years ago, someone, sorry can't remember who, posted a recipe for a pineapple dish. I remember it was cooked in a 13X9 pan and served with whip cream. I lost the recipe when moving from one laptop to another. Does anyone still have the recipe? I remember it was delicious!! Thanks!!
 
Ingredients

  • 1 (20 ounce) can crushed pineapple, drained
  • 1 cup white sugar
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon butter
  • 1 teaspoon ground cinnamon



Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
  2. In a mixing bowl, mix together the pineapple, sugar, cornstarch, water, eggs and vanilla. Pour the mixture into the prepared baking dish. Dot the mixture with butter and sprinkle with cinnamon.
  3. Bake in a preheated 350 degrees F (175 degrees C) oven for 1 hour.

I don't know the recipe you are talking about but this recipe is nice
 
I've got a really easy one. you can use a store bought pound cake or make one, cut in half length wise, make filling.

filling is one can crushed pinapple and one small tub frozen whipped topping. Put half the filling in the center and half on top.

Refridgerate till ready to eat. So good.
 
Yum yum yum!!! I've been reading those Stephanie Plum books and "pineapple upside down cake" appears in each so far and has been making me have cravings!!!
